Hey, it’ crawfish time in Louisiana. For you out-of-staters, these “mudbugs” grow in the south Louisiana swamps, and are often farm raised. Succulent, juicy red tasting meat that it hard to describe. Tastier than a shrimp. You won’t find them on many menus outside Louisiana, because 95% are sold locally. Everybody, and I mean everybody has a crawfish boil on regular occasions. So come on down!
